- 1 taza de Craisins® cranberries deshidratados
- 1/2 taza de zanahoria rallada
- 1/3 taza de cebollín en rodajas finas
- 1/4 taza de menta fresca picada
- 1/4 taza de albahaca fresca picada
- 12 hojas de lechuga romana o francesa (hoja grande)
- 1/2 taza de cacahuates salados

Combine los primeros seis ingredientes en una cacerola pequeña; llevar a ebullición. Reducir el calor; cocine a fuego lento, destapado, durante 5 minutos. Retire del fuego; agregue el jugo de limón y la cáscara; dejar de lado.
Combine el pollo, los cranberries deshidratados, la zanahoria, la cebolla, menta y albahaca en un tazón pequeño.
Coloque alrededor de 3 cucharadas de mezcla de pollo en cada hoja de lechuga. Cubra con 1 cucharada de salsa de cranberry y 2 cucharaditas de maní. Dobla la lechuga sobre el relleno. Sirve con la salsa restante.
